Fryer Paper Filter Upgrades

Year: 2023 / 24

Scope: Upgrade the existing centrifugal oil crumb filters to Pressurized Paper Filters with full line integration for both main line fryers. 

Challenges: Removing the existing filtration from the fryer room and adding remote paper filters presented layout and system integration challenges. Operational narrative required updates resulting in automation adjustments. In field oil piping and client driven redundancy requirements drove field assessments and detailed piping layouts by Peak.

Results: Peak Engineers worked to deliver options for integrating the Paper Filters into the existing fryer process that focused on operational redundance,  pipe routing and automation impacts. Oil pump, piping and tank sizing calculations were completed. Working with Plant team, detailed demolition and installation specification packages were developed by Peak to assist with vendor RFP process and selection. Full on site support including tolerance and pipe routing verifications were completed to ensure piping was installed per design. Complete As Built drawings and ISO models were completed with detailed revision history. 

As a result of the phase 1 fryer upgrade, the client utilized Peak services to assist with the second fryer upgrade in the following Fiscal Year annual shut down.
